Ingredients

For the Pasta:

  • 2 cups penne or fusilli pasta
  • 4 cups water
  • Salt (as needed)
  • 1 tsp oil

For the White Sauce:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour (maida)
  • 2 cups milk (warm)
  • Salt to taste
  • ½ tsp black pepper powder
  • ½ tsp chili flakes (optional)
  • ½ tsp oregano or Italian seasoning
  • ½ cup grated processed cheese (cheddar or mozzarella)

Optional Add-Ins:

  • ½ cup chopped onions
  • ½ cup chopped capsicum (green, red, yellow)
  • ¼ cup sweet corn
  • 1 tsp garlic (finely chopped)
  • 1 tbsp olive oil or butter for sautéing

Instructions

Step 1: Boil the Pasta

  1. In a large pot, boil 4 cups of water with a pinch of salt and 1 tsp oil.
  2. Add the pasta and cook until al dente (soft but slightly firm).
  3. Drain and rinse with cold water. Set aside.

Step 2: Prepare the Vegetables (Optional)

  1. In a pan, heat 1 tbsp olive oil or butter.
  2. Sauté garlic for 30 seconds until fragrant.

  1. In a separate pan, melt 2 tbsp butter on low heat.

  3. Slowly pour in warm milk while whisking continuously to avoid lumps.
  4. Cook the sauce on low heat until it thickens.
  5. Add salt, pepper, chili flakes, oregano, and cheese. Stir until the cheese melts into the sauce.

Step 4: Combine Pasta with Sauce

  1. Add the cooked pasta and sautéed vegetables to the white sauce.
  2. Mix gently until the pasta is well coated.
  3. Cook for 1–2 minutes on low flame to let the flavors blend.
  4. Garnish with extra cheese, herbs, or chili flakes if desired.
