Veg Manchurian Recipe – A Flavorful Indo-Chinese Treat

Veg Manchurian is one of the most loved Indo-Chinese dishes, bringing together the bold flavors of Chinese cuisine with an Indian twist. This delicious recipe combines deep-fried vegetable balls dunked in a spicy, tangy, and savory sauce. Ingredients

For the Manchurian Balls:

  • 1 cup cabbage (finely shredded)
  • ½ cup carrot (grated)
  • ½ cup capsicum (finely chopped)
  • ¼ cup spring onions (chopped)
  • 1-2 green chilies (finely chopped)
  • 1 tsp ginger (grated)
  • 1 tsp garlic (grated)
  • ¼ cup cornflour
  • ¼ cup all-purpose flour (maida)
  • Salt to taste
  • Oil for deep frying

For the Manchurian Gravy:

  • 1 tbsp oil
  • 1 tbsp garlic (finely chopped)
  • 1 tbsp ginger (finely chopped)
  • 1 green chili (sliced)
  • 2 tbsp spring onion whites (chopped)
  • ¼ cup capsicum (diced)
  • 2 tbsp soy sauce
  • 1 tbsp red chili sauce
  • 1 tbsp tomato ketchup
  • 1 tbsp vinegar
  • 1 tsp sugar
  • 1 cup water
  • 1 tbsp cornflour (mixed with 2 tbsp water for slurry)
  • Salt and pepper to taste
  • Spring onion greens for garnish

Instructions

Step 1: Prepare the Vegetable Balls

  1. In a large bowl, mix cabbage, carrot, capsicum, spring onions, green chilies, ginger, and garlic.
  2. Add cornflour, all-purpose flour, and salt. Mix well. The moisture from the veggies helps bind the mixture. Do not add water.
  3. Shape the mixture into small balls.
  4. Heat oil in a deep frying pan. Fry the balls on medium heat until golden brown and crisp.
  5. Remove and place them on absorbent paper. Keep aside.

Step 2: Make the Gravy

  1. Heat 1 tbsp oil in a pan. Add chopped garlic, ginger, and green chili. Sauté for a few seconds.
  2. Add spring onion whites and capsicum. Cook for 1–2 minutes on high flame for a slight crunch.
  3. Add soy sauce, chili sauce, tomato ketchup, vinegar, and sugar. Mix well.
  4. Pour in 1 cup of water. Bring it to a boil.
  5. Add cornflour slurry and stir continuously until the sauce thickens.
  6. Season with salt and pepper as per taste.

Step 3: Combine and Serve

  1. Add the fried veg balls to the hot gravy. Toss well to coat the balls evenly.
  2. Garnish with chopped spring onion greens.
  3. Serve hot with fried rice, hakka noodles, or enjoy as a starter.

  • Do not add water while making the veg balls; excess moisture can make them soggy.
  • Fry on medium heat to ensure the balls cook evenly from inside.
  • Adjust the spice levels according to your taste.
