Gajar ka halwa -A Timeless indian delight
Gajar ka halwa, also known as carrot halwa, is one of the most beloved traditional indian desserts. Especially popular during winters, this sweet dish is made using fresh red carrots, Milk, ghee and dry fruits.
orginating from north india, gajar ka halwa is a staple during festival like diwali and holi, and family celebrations.
INGREDIENTS :
- 1 kg red carrots(grated)
- 1 litter full-fat milk
- 4 tbsp ghee (clarified butter)
- 1/2 cup sugar (adjust to taste)
- 6-8 cardamom pods(crushed or powdered)
- 10-12 cashews
- 10-12 almonds (sliced)
- 10-12 raisins (optional)
INSTRUCTION :
- Boil the milk: In a heavy- bottomed pan, bring milk to a boil. add grated carrots and cook on medium flame, stirring occasionally.
- cook until milk reduces: Let the carrots cook in milk until on the milk is absorbed. This takes about 45 minutes.
- Add ghee: Add ghee and saute for 10 minutes until the mixture becomes glossy and aromatic.
- Add sugar and cardamom: stir in sugar and crushed cardamom. cook until the sugar dissolves completely and the halwa thickens.
- garnish and serve: Add chopped dry fruits. serve warm or chilled.
